This has been 3 years in the making…but some things are worth the wait! We took advantage of the cold weather 3 years ago and froze a proprietary blend of fresh-pressed apple juice.  Using the cryoextraction method, we removed the ice layer leaving behind a more velvety, concentrated apple-forward golden liquid. Once we achieved our desired Brix, we inoculated the cider with a champagne yeast. Over a very long stretch of time, we slowed the fermentation to a near halt by refrigerating the cider to ensure that we retained the crisp apple notes while achieving a perfect amount of residual sweetness; we repeated this process frequently until we had a luscious, full-bodied sip-worthy iced cider that we know you, and whomever you choose to share it with, will most certainly enjoy! 

11.5% alc./vol.

Some tips on how to savour iced cider.

1.     Chill your Cider Properly:

·        Before serving, make sure to chill the cider in the refrigerator for 3+ hours before serving. 

2.     Use the right Glassware:

·        Choose a glass that allows you to appreciate the aromas and flavour of the cider. (a glass that allows a little swirling will help open up the aromas and enhance your overall tasting experience.)

3.     Add Garnishes:

·        Take it to the next level… not only visually appealing but adding some fresh fruit slices or herbs can enhance flavours and complement your drink. 

4.     Serve in Moderation:

·        Pour a smaller amount.  It’s a sipping drink - pouring a small amount prevents over-dilution and ensure it stays chilled throughout the serving.

5.     Experiment with ice:

·        Ice dilutes your drink so make small ice cubes - maybe add fruit of herbs to them.  Or cut fun shapes in your favourite fruit and use that to keep your drink cold.

6.     Pair with food:

·        Such as spicy Thai, Indian or Creole dishes. Seafood, strong sharp cheeses, fatty fois-gras or light dessert.

7.     Sip and Savour:

·        Take your time to sip and savour the flavours.  Let it linger on your palate, pay attention to the evolving flavours and aromas as it warms up slightly.

Remember that the key is to enjoy the experience, and personal preferences may vary.  Feel free to experiment with different, temperatures and garnishes to find what suites your taste best.
